Ingredients
- 2 cups cooked rice (preferably day-old, cold rice) 🍚
- 2 tbsp oil (vegetable or sesame oil for added flavor) 🛢️
- 2 eggs, beaten 🥚
- ½ cup diced carrots 🥕
- ½ cup peas 🌱
- ¼ cup chopped green onions 🌿
- ½ cup protein (chicken, shrimp, tofu, or beef – optional) 🍗🍤
- 2 tbsp soy sauce 🥢
- 1 tsp sesame oil 🌰
- ½ tsp garlic powder 🧄
- Salt & pepper to taste 🧂
Instructions
1️⃣ Prepare Ingredients: If using fresh rice, let it cool before cooking. Chop vegetables and protein.
2️⃣ Heat the Pan: In a large pan or wok, heat 1 tbsp oil over medium-high heat.
3️⃣ Scramble the Eggs: Push ingredients to the side, pour in beaten eggs, and scramble quickly. Remove and set aside.
4️⃣ Sauté the Vegetables & Protein: Add another 1 tbsp oil to the pan. Toss in carrots, peas, and any protein. Stir-fry for 2-3 minutes.
5️⃣ Add the Rice: Increase heat to high, add cooked rice, and break up any clumps. Stir well for 2 minutes.
6️⃣ Season It: Pour in soy sauce, sesame oil, and garlic powder. Stir-fry for another 2-3 minutes to evenly coat the rice.
7️⃣ Finish & Serve: Stir in scrambled eggs and chopped green onions. Mix well, season with salt and pepper, and enjoy!
